Binchotan is the white charcoal of Japan, prized for its clean, blistering heat and whisper of smoke. Our chef has spent three decades in front of that fire, reading each ember by colour and coaxing every skewer to its exact moment. Glazes and dipping sauces are built in house from scratch, quiet family recipes brushed on by hand between turns of the skewer. The result is deceptively simple: prime short rib caramelised at the edge, garlic butter prawns still glossy, cheese stuffed mochi molten at the centre. It is a craft you taste before you understand.
